Christmas Dessert
I used to own a restaurant here in Meadows of Dan and one of the favorite pies I made was the "Possum Pie". That's right I said it possum pie! Although no possums' are necessary for the pie you could always have one as the main coarse. Hee hee, just kidding! Below is the recipe and it's sooo simple, a perfect pie for the rush of the holidays.
Possum Pie
2 pkgs. cream cheese, softened
3/4 c. confectioners' sugar
1 graham cracker crust (9 inch)
1/4 c. chopped pecans
1/3 c. instant chocolate pudding mix
1/4 c. instant vanilla pudding mix
1 3/4 c. cold milk
3/4 tsp. vanilla extract
1/2 c. whipping cream, whipped
12 to 16 pecan halves
In a bowl, beat cheese and sugar until smooth. Spread onto bottom of crust. Sprinkle with chopped pecans. In another mixing bowl, combine pudding mixes. Add milk and vanilla; beat on low for 2 minutes. Spoon over pecans. Refrigerate for at least 4 hours. Top with whipped cream and pecan halves.
