Christmas Dessert
I used to own a restaurant here in Meadows of Dan and one of the favorite pies I made was the "Possum Pie". That's right I said it possum pie! Although no possums' are necessary for the pie you could always have one as the main coarse. Hee hee, just kidding! Below is the recipe and it's sooo simple, a perfect pie for the rush of the holidays.
Possum Pie
2 pkgs. cream cheese, softened
3/4 c. confectioners' sugar
1 graham cracker crust (9 inch)
1/4 c. chopped pecans
1/3 c. instant chocolate pudding mix
1/4 c. instant vanilla pudding mix
1 3/4 c. cold milk
3/4 tsp. vanilla extract
1/2 c. whipping cream, whipped
12 to 16 pecan halves
In a bowl, beat cheese and sugar until smooth. Spread onto bottom of crust. Sprinkle with chopped pecans. In another mixing bowl, combine pudding mixes. Add milk and vanilla; beat on low for 2 minutes. Spoon over pecans. Refrigerate for at least 4 hours. Top with whipped cream and pecan halves.
Enjoy!

Does anyone know......
Does anyone know what kind of caterpillar this is? If I had to guess I would say it's a luna moth caterpillar. As I was walking to the mailbox today I seen this huge bug-gar just a gettin' it across my driveway on it's way to my garden. Of course I have to go in for a closer look! It's funny to see all of the creatures ya come across when your not spraying chemicals all over the place!

Canning Canning
Well it's been pretty busy here, Saturday I canned 18 pints of corn relish, 4 pints of muscadine grape juice, 2 quarts and 1 pint of green beans and finally made two loaves of wheat bread. Boy, was I beat that evening! But the feeling you get at the end of that hard day or when you go to your full pantry and see all of those beautiful organic homemade goodies just makes your heart leap with joy, or it does me anyway ;>) I have to mention that I have a little helper, my hubby. He gets right in there and helps me every step of the way!
I made this green tomato chow chow last week when my beautiful tomatoes suddenly got a late blight and started rotting! Oh well, when life gives you lemons make chow chow! I got 18 pints out of them anyway.
